Bill’s Restaurant and Bar is delighted to announce a new look for Bill’s Exeter which re-opened Tuesday 14 May. Whilst staying true to its roots, the restaurant has undergone a transformation with contemporary decor, luxurious velvet seating and stunning chandeliers.
Over the past few weeks diners have been asked to pick a charity close to their hearts through a ballot box in the restaurant, which Bill’s Exeter will then support over the coming year. The three charities were Devon Air Ambulance Trust, St Petrock’s and Good Gym. Customers were asked to vote for their favourite charity through the ballot box and over 1,000 votes were made.
St Petrock’s was the winner, a charity in Exeter for people who are homeless or vulnerably housed and Bill’s Exeter will host fundraisers throughout the year to support them.
Bill’s are also bringing a beautiful flower wall to town. It will feature over a myriad of flowers and will be the perfect backdrop for this instagrammable moments!
Bill Collison, Founder of Bill’s, says, “Good quality food in a welcoming environment has always been at the core of Bill’s, which is why we felt a fresh new look for Exeter was necessary. We are proud to create restaurants that are full of vibrant colour and vintage trinkets, many of which I have handpicked myself. I believe that the new look transcends all dining times which will only enhance our diners experience and showcase our vibrant food and drinks. Join us for dinner when the restaurant comes alive, the lights are turned down and the beautiful candles flicker”.
Although the restaurant interiors have had a revamp, the food is still at the very core of every Bill’s restaurant, with the group recently enhancing their evening menus. The menu has always had a strong emphasis on vegetarian food and fresh produce which stems from founder Bill Collison’s days as a greengrocer and the basis of his first restaurant in Lewes.
They have introduced seasonal changes to their menus and new evening specials with dishes such as Steak and Rarebit Pie and Vegan Black Bean Chilli, a new dinner set menu with fantastic nightly specials including Lamb Shank with Truffle Mash.
They have also improved their cocktail menu with drinks including Bill’s Collins – Wyborowa Vodka, rhubarb liqueur, raspberry syrup and lime juice and Hedgerow Fizz – Wild Sussex elderflower cordial topped with prosecco.
